The mountain sheep milk, GMO-free and naturally lactose-free, is the key component of Pecorino Toscano from Casentino, and it’s the origin of its quality. The sheep graze among the meadows and woods of Casentino, in the homonymous natural park located on the border between Tuscany and Emilia-Romagna. The pastures’ altitude ranges from 1000 to 1600 meters, making the milk exceptionally aromatic and creamy. Pecorino del Casentino is produced according to centuries-old tradition in the mountain village of Talla, where meticulous hands carefully follow it throughout the aging process.

Tasting notes: Remove from the refrigerator 30 minutes before consuming. It pairs perfectly with a drizzle of Tuscan olive oil, a sprinkle of black pepper, and a glass of Chianti Classico.

Storage: Wrap the cheese in food-grade paper or perforated plastic film to allow proper ventilation even in the refrigerator. It can also be stored in a cool, enclosed place such as a cellar at a temperature between 10 and 15 degrees Celsius.
