Pea Pasta is a nutritious choice, perfect for vegetarian or gluten-free diets. It pairs well with vegetables and can be enhanced with fresh peas and rice cream. Being gluten-free, it requires careful but quicker cooking. It is recommended to cook it in plenty of salted water and briefly sauté it with some cooking water before adding the sauce.

Podere Pereto Organic Farm was established in 1991, in Serre di Rapolano, in the heart of Tuscany. The headquarters is an ancient farm from the 1500s, surrounded by the gentle lines of the hills in the enchanting landscape of the Crete Senesi. The goal is to practice organic farming, creating a sustainable microcosm from both an ecological and economic-social perspective. This was an innovative production model for the time, far removed from the dictates of conventional agriculture more common at that time. From the beginning, local and ancient varieties have been cultivated, excluding the use of fertilizers, chemical pesticides, and synthesis, as stipulated by the first European regulation on organic agriculture in 1991. Thus, in 1993, the company obtained organic certification from ICEA.

The connection with agricultural tradition and the constant dedication to fieldwork, supported by a new focus on the environment and ecosystem integrity, were soon noticed in the area. So, in 1994, Podere Pereto began collaborating with the Association of Guardian Farmers to promote the recovery and safeguarding of ancient varieties of Tuscan-origin seeds, precious witnesses to the richness of ancient knowledge to be protected. These are delicate varieties and victims of genetic erosion (loss of plant biodiversity). They can still be found today in the lands of elderly farmers, who have always cultivated the seeds of their ancestors to preserve their quality, value, and taste.

Legumes such as the small chickpea, Tuscan bean, and zolfino, and cereals such as soft grains Verna, Gentil Rosso, Frassineto, and durum wheat Cappelli, not only naturally adapt to the local soil and climate but also retain irreplaceable nutritional characteristics. These qualities are perfectly compatible with organic farming systems, as they do not require special external interventions to grow and withstand weather, both climatic and otherwise, that may arise during cultivation. Furthermore, the cultivation of legumes allows the company to adopt a three-year rotation system and prevent excessive exploitation of the land, typical of intensive cultivation methods. This system involves alternating legume cultivation with cereal cultivation in a given plot every year, thus ensuring respect for the soil balance, thanks to the nitrogen-fixing characteristics of legumes, making it more available for plants.

All of this contributes to the production of healthy and quality products that embody respect for the environment, boasting a completely sustainable cultivation method.

Since then, the company’s growth has been steady. In 2001, thanks to a contribution from the European Community, an agricultural shed equipped with the most innovative and sophisticated machinery was built. Years of research and investment led to the creation of a short and efficient cereal and legume supply chain, ensuring constant control over all production phases. After processing the raw materials, the finished products are immediately packaged in a protective atmosphere with food-grade nitrogen to ensure longer shelf life. The result is an excellent artisanal product, constantly monitored from germination to final packaging.

Over the years, Podere Pereto has continued to evolve, adding flour production to its cereal and grain legume supply chain with the purchase of a stone mill. After nearly 30 years of production, the company is still expanding today, never having lost its concern for environmental sustainability, an indispensable cornerstone at the basis of every decision.

In 1991, Franco had just over 20 hectares at his disposal; today, the company cultivates an area of ​​approximately 600 hectares, also becoming a reference point for many other small local realities. The company’s product range has grown from the initial 8 references to the current 200. All of this has been possible thanks to a vision always projected into the future, with targeted investments aimed at constantly innovating structures, machinery, and production processes, to remain up to date with the times. Concrete examples include the implementation of photovoltaic panels in 2011, the purchase of modern tools to reduce emissions, and finally, the adoption of computer and digital update programs to renew various company departments, from field processing to storage in warehouses.
