VACCHE ROSSE – 24/30 Months – Il Cantone – Parmigiano Reggiano


The Parmigiano Reggiano “Red Cows” aged from 24 to 30 months is a prized variation of this famous Italian cheese. Made from the milk of traditional red cows, it has an intense, complex, and slightly spicy flavor. The long aging process gives it a granular texture and richness of aromas, making it ideal for grating over dishes like pasta or enjoying on its own.

The red cows arrived in Italy during the period of the barbarian invasions, probably from southern Russia. Monks adopted these cattle to produce the ancestor of today’s Parmigiano Reggiano; later, they were also used in agricultural contexts; thus, farms became common in Northern and Central Italy, until the mid-20th century, when they were replaced by those of the Friesian breed, which offered greater quantities of milk. For this reason, around the 1980s, there were only a few hundred heads left. In recent years, thanks to groups of breeders, efforts have been made to recover the Reggiana breed.

At the Il Cantone Agricultural Company, today it is Stefano and his son Cristian who take care of maintaining the breed, after their father Agostino. In just a few years, they have managed to increase the number of heads on the farm, contributing to saving the breed, which was at risk of extinction after World War II. Since 2010, the activity has taken place in the new barn. Future projects involve its completion, thus reaching more than 200 heads.

Vanessa, Stefano’s wife, manages the store; in the shop, in addition to cheese, you can also find butter and meat from the red cows.

Milking takes place twice a day, to ensure excellent milk quality, respecting a 12-hour interval. In the barn, the feeding is traditional, and the one-plate meal is prohibited. At least 90% of the feed comes from the area and is GMO-free. The cows feed on feed, chopped feed, hay, and grass, which give the cheese its characteristic straw-yellow color.
