Over the centuries, various hybrid varieties have emerged, but the distinctive aromatic profile of Venezuelan cocoa is known for its notes of fruit and nuts, with a predominant chocolate aftertaste. This bar contains cocoa from various hybrid varieties originating from the Venezuelan states of Merida, Trujillo, Tachira, and Zulia, located south of Lake Maracaibo. This chocolate offers a delicate and fresh aroma, with hints of almonds and coffee. Characterized by low acidity and astringency, it displays great finesse and elegance, with a persistent and lasting flavor.

Domori S.p.A. is headquartered in None, on the outskirts of Turin, where its production facility is located. Today, Domori is part of the Polo del Gusto, the Illy Group holding company that encompasses all non-coffee activities, and besides being a leading company in the production of high-quality chocolate, it has become a distributor for Italy of a collection of excellent products: from Dammann Frères teas to Agrimontana jams, passing through the prestigious wines of Mastrojanni and Champagne Barons de Rothschild. In 2019, it also announced the signing of an agreement to acquire Prestat, one of the most beloved chocolate brands in the United Kingdom and a supplier to the British Royal Family. This acquisition allows Prestat to have access to the exclusive raw materials used by Domori and thus integrate control of the entire value chain into its production, “from bean to truffle.”

Thanks to its innovative approach and constant pursuit of excellence, today Domori’s turnover exceeds €20 million, and its products are sold in Italy and in major foreign markets. Since July 23, 2020, Domori has changed its legal name to Domori S.p.A. and has decided to become a Benefit Corporation. As a Benefit Corporation, the company intends to pursue common benefit objectives and operate responsibly, sustainably, and transparently towards individuals, communities, territories, and the environment, as well as cultural and social assets, entities and associations, and other stakeholders.

Trinitario cocoa is an aromatic cocoa, representing 8% of global cocoa production. Trinitario cocoa is the result of crossing Criollo and Forastero cocoa varieties, and therefore possesses characteristics common to both: it is robust with high yields, similar to Forastero, yet boasts a rich and noble aromatic profile, similar to Criollo cocoa.
Domori has revived this precious Trinitario cocoa variety, purchasing it from plantations throughout Latin America and Africa: in Colombia, Venezuela, Peru, Madagascar, and Tanzania.
Trinitario cocoa beans are then transformed every day using the world’s shortest and purest recipe.

Cultivation type: Trinitario hybrid with a strong presence of Criollo.

Country and region of origin: Venezuelan states of Merida, Trujillo, Tachira, and Zulia, south of Lake Maracaibo.

Tasting notes: delicate and very fresh aroma with hints of almonds and coffee. Low acidity and astringency, great finesse and elegance, and long-lasting flavor.

Storage instructions: the product should be stored in a cool, dry place, away from odors, at a temperature between 14°C and 20°C.
