7,7931,90

The delicate fennel tops are the protagonists of this pesto, accompanied by a selection of high-quality ingredients. Extra virgin olive oil gently embraces the fennel, creating an oily base that enhances its fresh flavor. Almonds, with their crunchiness, give the pesto a rich and nourishing texture, while raisins add a subtle sweetness. A touch of salt enhances the complexity of flavors, while black pepper adds a lively note. This pesto, with its balanced combination of high-quality ingredients, is suitable for dressing pasta or adding flavor to bruschetta.

The Virgona Farm was established to continue a long winemaking tradition, contributing to the promotion of wine production in Salina, given the economic, social, historical, and cultural significance this sector has always held on the island.
The Aeolian Islands archipelago takes the shape of a “Y,” and at its center lies Salina, the ancient Dydime, the twin island formed by two ancient extinct volcanoes: Monte Fossa delle Felci and Monte dei Porri, now protected by a Nature Reserve. Within the 27 square kilometers of this lush volcanic land, a variety of environmental and scenic resources are concentrated, constituting a heritage to be tenaciously preserved.
Salina is divided into three small municipalities: Malfa on the northern slope, Santa Marina on the eastern coast, and Leni in the southern inland. Every year, it is a sought-after destination for thousands of tourists who are enthusiastic about the island’s beauty, with its crystal-clear and uncontaminated waters, considered a true paradise for divers; beaches, coves, and cliffs for sailors, sea-carved cliffs, and spectacular sunrises and sunsets with kaleidoscopic colors.
Salina is the island that, more than the others, has managed to preserve its rural soul and maintain the typical, genuine, and authentic nature of its traditional economy, based on caper cultivation and the production of the famous Malvasia wine.
The island’s vibrant colors and intense scents are also captured and reintroduced in the variety of its cuisine, offering various interpretations of local gastronomic traditions.
