For several years, Latteria Due Madonne has embarked on a journey of quality, activating completely non-GMO supply chains, which has also allowed the production of GMO-free Parmigiano-Reggiano.
The project was undertaken with the aim of creating a special Parmigiano Reggiano DOP that brings with it a guarantee of quality and safety, both for the environment and for consumers.

*The absence of lactose is the natural result of the typical process of obtaining Parmigiano Reggiano. It contains galactose in quantities less than 0.01 g/100 g.

It is recommended to store Parmigiano Reggiano vacuum-packed in the refrigerator or in a cool place. Actually, it can be exposed to room temperature for short periods without damage, but it is preferable to store it in a refrigerated environment to preserve its aromatic characteristics (between 2°C and 8°C).
If you notice, especially during the summer, that the cheese has released moisture due to the heat inside the vacuum-sealed package, it is better to store it in the refrigerator before opening the package. Once it has cooled down, it will be easier to remove any oily film with a paper towel.
Once removed from the vacuum-sealed package, the cheese should be stored in the refrigerator, wrapped in special food waxed paper or in airtight glass/plastic containers, preferably not in contact with other foods and at an optimal humidity level.
