More than fifteen years ago, the Pasticceria Giotto project came to life as a challenge. Today, it’s a reality: a professional pastry laboratory inside a prison that produces artisanal sweets with the precision demanded by haute patisserie.

The pastry laboratory was established in the Due Palazzi prison in Padua in 2005, to work alongside inmates. To date, over 200 detainees have been guided through a training and professionalization program in the art of pastry-making and beyond. The pastry laboratory is complemented by a packaging and logistics department where the sweets are dressed and prepared for shipment.

Pasticceria Giotto believes in four fundamental points:

Making all this possible is the work of master pastry chefs, logistics and quality sector professionals who choose to carry out their activities in prison every day. The teams are trained and supervised by the social office, which actively collaborates with the penitentiary institute for the selection and training of inmates.

Ingredients: soft wheat flour type 0, pitted sour cherries in sour cherry syrup 14.6% (sour cherries, sugar, glucose syrup, water, sour cherry juice, acidifier: citric acid, natural flavors, coloring: anthocyanins from vegetable extracts), butter, fresh pasteurized egg yolk, sugar, fructose, hazelnut gianduia chocolate 4.6% (sugar, hazelnuts, cocoa mass, cocoa butter, fat-reduced cocoa powder, emulsifier: soy lecithin, natural flavor), natural sourdough (wheat), emulsifiers: mono- and diglycerides of fatty acids, whole milk powder, cocoa, salt, brewer’s yeast, flavors.
The product contains gluten, eggs, milk, soy, hazelnuts, and is produced in a laboratory where sesame, nuts, sulfites, and peanuts are handled.
