Pearled barley is a variety of barley from which the outer hull has been removed, leaving only the inner kernel. This pearling process makes barley tenderer and quicker to cook compared to whole barley. It is widely used in various culinary recipes, including cold salads, soups, stews, and traditional dishes like “orzotti,” a dish similar to risotto prepared with pearled barley instead of rice.

Thanks to its slightly chewy texture and delicate flavor, pearled barley lends itself well to a wide range of dishes, both sweet and savory. It is a rich source of fiber, protein, vitamins, and minerals, making it a nutritionally advantageous choice.

Molino Agostini is a company looking towards the future, with roots spanning three generations. Emidio Agostini began his milling business at the end of World War II. The need to rebuild Italy, the necessity to start anew, led him not only to establish the mill but also a pasta factory and an oil mill.

From that initial project, and to keep alive the passion of his grandfather and the family, for almost 20 years Roberto Agostini has chosen to convert the mill plant entirely to organic production.

Molino Agostini is 100% organic. Today, after years, Roberto has managed to restore an entire line of pasta produced with organic semolina and create a new range of products, all strictly organic. He wanted to remain an artisan of flour, while respecting the territory, biodiversity, the health of those around him, and his customers. To achieve these results, Roberto has entered into cultivation contracts with local organic farming companies, has sought out ancient indigenous grains to cultivate to experiment with new production methods, and has radically changed the way of production.
