The mountain sheep’s milk, free from GMOs and naturally lactose-free, is the most important component of Pecorino del Casentino and is the origin of its quality. The sheep graze among the meadows and forests of the Casentino, in the homonymous natural park located on the border between Tuscany and Emilia-Romagna. The altitude of the pastures ranges from 1000 to 1600 meters, making the milk exceptionally aromatic and creamy. Pecorino del Casentino is produced according to a centuries-old tradition in the mountain village of Talla, where careful hands follow it closely throughout the aging process.
Tasting notes: Remove from the refrigerator 30 minutes before consuming. It pairs perfectly with two drops of Tuscan olive oil, a sprinkle of black pepper, and a glass of Chianti Classico.
Storage: Wrap the cheese in food-grade paper or perforated plastic wrap to allow proper ventilation, even in the refrigerator. It can also be stored in a cool, enclosed place such as a cellar at a temperature between 10 and 15 degrees Celsius.

Cedar, with its aromatic peel and succulent pulp, is the undisputed star of the marmalade. Its natural sweetness is complemented by a touch of sugar and water, creating a velvety texture and a balanced sweetness that enhances the authentic flavor of the fruit. Cedar Marmalade lends itself to various uses in the kitchen: spread on slices of toasted bread in the morning, paired with fine cheeses, or used as an ingredient in refined desserts.
