Decorticated Red Lentils are lentils from which the outer husk has been removed. They have a soft texture and offer quick cooking. They are ideal for preparing creamy soups, curries, and sauces, as they tend to break down during cooking. They pair well with ingredients such as tomatoes, coconut, ginger, and curry, adding a touch of color and flavor to dishes.

The Organic Agricultural Company Podere Pereto was established in 1991, in Serre di Rapolano, in the heart of Tuscany. The headquarters is an ancient farmhouse dating back to the 1500s, surrounded by the gentle lines of the hills that unfold in the enchanting landscape of the Crete Senesi. The aim is to practice organic agriculture, giving life to a sustainable microcosm both from an ecological and economic and social point of view. It was an innovative production model for the time, very different from the dictates of conventional agriculture that were more widespread at that time. From the beginning, local and ancient varieties have been cultivated, excluding the use of fertilizers, chemical pesticides, and synthetic ones, just as the first European regulation on organic agriculture in 1991 prescribed. Thus, in 1993, the company obtained organic certification from ICEA. The connection with agricultural tradition and the constant dedication to fieldwork, supported by a new focus on the environment and the integrity of the ecosystem in which they work, were soon noticed in the area. So, in 1994, Podere Pereto began collaborating with the Association of Guardian Farmers, to promote the recovery and safeguarding of ancient varieties of seeds of Tuscan origin, precious witnesses to the richness of an ancient knowledge to be protected. These are delicate varieties and victims of the phenomenon of genetic erosion (loss of plant biodiversity). They can still be found today in the lands of elderly farmers, who have always cultivated the seeds of their ancestors to preserve their quality, value, and taste.

Legumes such as small chickpeas, Tuscan beans, and zolfino beans, and cereals such as soft grains Verna, Gentil Rosso, Frassineto, and hard grain Cappelli not only naturally adapt to the local soil and climate but also retain irreplaceable nutritional characteristics. These qualities are perfectly compatible with the organic farming system, as they do not require special external interventions to grow and withstand the weather, both climatic and non-climatic, that may occur during cultivation. Furthermore, the cultivation of legumes allows the company to adopt a three-year rotation system and prevent excessive exploitation of the land, typical of intensive cultivation methods. This system involves alternating, year by year, in a specific plot, a legume crop with a cereal crop, thus ensuring the respect of the earth’s balance, thanks to the characteristics of legumes to fix nitrogen and make it more available for plants.

All this contributes to the production of healthy and quality products, which embody respect for the environment, being able to boast a completely sustainable cultivation method.

Since then, the company’s growth has been constant. In 2001, thanks to a contribution from the European Community, an agricultural shed equipped with the most innovative and sophisticated machinery was built. Years of research and investment have led to the creation of a short and efficient chain of cereals and legumes, which guarantees constant control over all stages of production. After processing the raw materials, the finished products are immediately packaged in a protective atmosphere with food-grade nitrogen to ensure greater shelf life. The result is an excellent artisanal product, constantly monitored from germination to final packaging.

Over the years, Pereto has continued to evolve, adding to its chain of whole grains and legumes, also the production of flours, thanks to the purchase of a stone mill. After almost 30 years of production, the company is still expanding today, without ever losing its concern for environmental sustainability, an indispensable cornerstone at the basis of every choice.

In 1991, Franco had just over 20 hectares available; today the company cultivates an area of about 600 hectares, also becoming a reference point for many other small local realities. The company’s product list has grown from the initial 8 references to the current 200. All this has been possible thanks to a vision always projected into the future, with investments aimed at constantly innovating structures, machinery, and production processes, in order to always keep pace with the times. Concrete examples have been the implementation of photovoltaic panels in 2011, the purchase of modern tools to reduce emissions, and finally, the adoption of computer and digital updating programs, in order to renew various company compartments, from field processing to storage in warehouses.
