Extra virgin olive oil, with its unmistakable fragrance, envelops the capers, creating a combination of taste and freshness. Vinegar, with its slightly acidic touch, enhances the savory profile of the preparation. Oregano adds a Mediterranean aroma, while garlic, underscored by the presence of bay leaf, contributes to creating an aromatic balance. A pinch of chili pepper adds a spicy note, while black pepper completes the harmony of flavors.

The Virgona Farm was born as the culmination of a long winemaking tradition, contributing to the enhancement of Salina’s wine production, given the economic, social, historical, and cultural importance this sector has always had on the island.
The archipelago of the Aeolian Islands takes the shape of a “Y,” and at its center lies Salina, the ancient “Dydime.” Salina is the twin island formed by two ancient extinct volcanoes, Mount Fossa delle Felci and Mount dei Porri, now protected by a Nature Reserve. Within the 27 square kilometers of this lush volcanic land, there is a variety of environmental and landscape resources that constitute a heritage to be fiercely preserved.
Salina is divided into three small municipalities: Malfa on the northern slope, Santa Marina on the eastern coast, and Leni in the southern hinterland. Each year, it is a sought-after destination for thousands of tourists enthralled by the island’s beauty, including its crystal-clear and unspoiled waters, considered a true paradise for scuba divers, as well as its beaches, coves, and cliffs for boating enthusiasts. The sea has sculpted impressive cliffs, and the island offers spectacular sunrises and sunsets with kaleidoscopic colors.
Salina is the island that, more than others, has managed to preserve its rural soul and maintain the typical, genuine, and authentic characteristics of its traditional economy, based on caper cultivation and the production of the famous Malvasia wine.
The island’s vibrant colors and intense fragrances are also captured and presented in the variety of its cuisine, offering different interpretations of local gastronomic traditions.
