The Aeolian Caponata is prepared with high-quality ingredients. Pieces of tomatoes, salty olives, aromatic capers, sweet onions, crunchy celery, sweet and sour vinegar, vibrant peppers, soft potatoes, and tender eggplants come together in a harmonious mix. Fresh basil adds an herbal note, while a slight sweetness from sugar balances the flavors. Everything is bound together by extra virgin olive oil, which gives the Aeolian Caponata a soft texture and a rich flavor.

The Virgona Farm was born as the culmination of a long winemaking tradition, contributing to the enhancement of Salina’s wine production. Given the economic, social, historical, and cultural importance that this sector has always held on the island.
The Aeolian Islands, shaped like a Y (upsilon), have Salina right at the center. Salina is the ancient Dydime, a twin island formed by two ancient extinct volcanoes, Monte Fossa delle Felci and Monte dei Porri, now protected by a Nature Reserve. Within its 27 square kilometers of lush volcanic land, a variety of environmental and landscape resources are concentrated, constituting a heritage to be tenaciously preserved.
Salina is divided into three small municipalities: Malfa on the northern slope, Santa Marina on the eastern coast, and Leni in the southern hinterland. Every year, it is a sought-after destination for thousands of tourists enthusiastic about the beauty the island offers with its crystal-clear, uncontaminated waters, considered a true paradise for scuba divers. There are beaches, coves, and cliffs for boaters, sea-carved cliffs, and spectacular sunrises and sunsets with kaleidoscopic colors.
Salina is the island that, more than the others, has managed to preserve its rural soul and maintain the typical, genuine, and authentic nature of its traditional economy, based on caper cultivation and the production of the famous Malvasia wine.
The island’s vibrant colors and intense fragrances are also captured and reintroduced in the variety of its cuisine, offering different interpretations of local gastronomic tradition.
